Nutritious & Delicious Banana Bread
Seriously - have you ever met anyone who didn’t like banana bread? Nope, us either.
In it’s 'traditional' form, it’s more cake than bread, but the lovely ladies at Hemsley & Hemsley have reinvented it for more nutrition and scrumptious goodness.
Not only is it free from processed sugars, packed with flavour and fibre - it is also gluten and dairy free, making it ideal for parties and picnics.
Is there anything more comforting than a fresh slice of banana bread still warm from the oven.
So, without further ado, here’s one of our absolute favourites.
- 3- 4 large ripe bananas (350 grams)
- 60g coconut flour
- 1 tablespoon of cinnamon
- 3 large eggs
- 3 tablespoons of coconut oil (in liquid form)
- 1 teaspoon vanilla extract
- 1.5 teaspoon of bicarb
- 1 tablespoon of lemon juice
- 1 tablespoon of maple syrup (or rice malt syrup)
Preheat an oven to 180 degrees celsius and line a loaf tin with baking paper.
Using very ripe bananas, peel and mash 350g of banana with a fork
Place all of the dry ingredients in a large mixing bowl, before adding the eggs, mashed banana and the remainder of the wet ingredients. Mix, blend or process until well combined and smooth.
Empty the banana bread batter into the loaf tin and bake for 50-60 minutes until a skewer comes out clean.
Leave to cool completely in the tin, before removing to devour!
