Spinach & Feta Supercharged Muffins

These scrumptious spinach and feta muffins are packed with nutrition and fibre and make ideal and freezable snacks on the go. They are very simple to make too- which is always a bonus in our books!
They contain mixed seeds and bran, which provide a powerful hit of omega 3 fatty acids, selenium, folate and protein… and which also helps to keep you fuller for longer.

Ingredients (12 portions):

  • 400g self-raising flour
  • 1 teaspoon baking powder
  • 1 tablespoon bran
  • 1 teaspoon dried oregano
  • 30g mixed seeds (such as chia, flax and sunflower seeds)
  • 100 g spinach leaves (sliced)
  • 150g feta cheese (crumbled or chopped)
  • 2 tablespoons parmesan cheese
  • 325ml soy or milk
  • 4 tablespoons olive oil
  • 1 large egg
  • Large pinch of salt and pepper

Method for the Spinach & Feta Supercharged Muffins:

  1. Preheat the oven to 200 degrees celsius and line a 12 hole baking tray with muffin cases
  2. Place the flour, baking powder, seeds, oregano and bran in a large mixing bowl along with the salt and pepper and stir thoroughly to combine
  3. Add the spinach, feta and parmesan to the dry ingredients and mix well
  4. In a separate dish, whisk the egg, milk and oil thoroughly before adding it to the bowl with the dry ingredients
  5. Stir all the ingredients until just combined and spoon evenly into the muffin cases
  6. Bake for 25-30 minutes until golden brown
